Whoohooo...we made it to Thursday, July 2nd! How are you doing? I had a Zoom meeting with my colleagues this morning - and then found myself a little overwhelmed with everything that's happening in the garden - All. At. Once.
Gate 39, right? (We're halfway through!!) Provocation.
That means - action. I walked through the garden making a note of tasks that would make me feel like I had accomplished something. As I harvested another 2 baskets of nettles, I noticed purslane growing in the coop area. I had learned about it years ago in a foraging class. It's a weed - and one of the most nutritious foods to be found!
This is what Celeste writes: "Purslane has seven times more betacarotene than carrots as well as 14 times more omega-3 fatty acids and six times the vitamin E of spinach. Some researchers claim that it actually has more omega-3s than some fish oils. It is also high in iron, magnesium, manganese, potassium, calcium, and copper. Traditional Chinese medicine has long used it to help with many gastrointestinal disorders."
Needless to say, I took a moment to harvest some of that, too.
I had great intentions about making a salad and then got distracted by the next project.
Ultimately, I found myself just snacking on the occasional piece through the rest of the afternoon.
It's very energizing and hydrating. At one point, after completing another batch of Wormwood tincture, I also glanced through
Rosalee's Wild Remedies book, too - and found this idea:
